For the watermelon frosting:
2 sticks unsalted butter
1 teaspoon clear vanilla extract
½ package watermelon flavored gelatin
4 cups powdered sugar
2 tablespoons milk
Dark pink or red gel food coloring
1 cup white sanding sugar
Instructions
Cream the butter: In a large mixing bowl or stand mixer, cream the butter until light and fluffy. Add vanilla, watermelon gelatin, and sanding sugar. Beat until well incorporated.
Mix powdered sugar: Slowly add powdered sugar, 1 cup at a time, alternating with a splash of milk between each cup. Mix for at least one minute between cups until the frosting is creamy.
Add coloring: Once the frosting reaches the desired consistency, add pink food coloring. Adjust with red for a deeper pink.
