This homemade watermelon frosting is soft, sweet, tangy, and creamy! Fluffy yet dense, the light buttercream is perfect to pipe onto cupcakes or to decorate a cake.

For the watermelon frosting:

  • 2 sticks unsalted butter
  • 1 teaspoon clear vanilla extract
  • ½ package watermelon flavored gelatin
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • Dark pink or red gel food coloring
  • 1 cup white sanding sugar

Instructions

  1. Cream the butter: In a large mixing bowl or stand mixer, cream the butter until light and fluffy. Add vanilla, watermelon gelatin, and sanding sugar. Beat until well incorporated.
  2. Mix powdered sugar: Slowly add powdered sugar, 1 cup at a time, alternating with a splash of milk between each cup. Mix for at least one minute between cups until the frosting is creamy.
  3. Add coloring: Once the frosting reaches the desired consistency, add pink food coloring. Adjust with red for a deeper pink.
