For the Dough:

  • 3½ cups all-purpose flour (plus extra for dusting)
  • ½ cup granulated sugar
  • 1 packet (7 g) active dry yeast
  • ¾ cup warm milk (110 °F/43 °C)
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • ½ teaspoon salt

For the Filling:

  • 1½ cups farmer’s cheese or ricotta
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk

For Brushing:

  • 1 egg, beaten (for egg wash)

Instructions

  1. In a small bowl, whisk warm milk, yeast, and a pinch of sugar. Let sit 5–10 minutes, until foamy.
  2. In a large bowl, combine flour, sugar, and salt. Add yeast mixture, egg, and melted butter. Mix until a soft dough forms.
  3. Knead on lightly floured surface ~8 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot ~1 hour or until doubled.
  4. For the filling, mix cheese, sugar, vanilla, and egg yolk until creamy.
  5. Preheat oven to 350 °F (175 °C). Line a baking sheet with parchment.
  6. Punch down dough, divide into 12 equal pieces (~80 g). Shape into balls and place spaced on sheet.
  7. Gently press thumb into center of each to create a well. Spoon 1 tablespoon of cheese filling into each indentation.
  8. Brush edges with egg wash. Bake 18–22 minutes until buns are golden and filling sets.
  9. Cool slightly on the pan, then transfer to wire rack. Serve warm or at room temperature.
