Vatrushka – Sweet Cheese-Filled Bun Recipe

For the Dough:
- 3½ cups all-purpose flour (plus extra for dusting)
- ½ cup granulated sugar
- 1 packet (7 g) active dry yeast
- ¾ cup warm milk (110 °F/43 °C)
- 1 large egg
- ¼ cup unsalted butter, melted
- ½ teaspoon salt
For the Filling:
- 1½ cups farmer’s cheese or ricotta
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg yolk
For Brushing:
- 1 egg, beaten (for egg wash)
- In a small bowl, whisk warm milk, yeast, and a pinch of sugar. Let sit 5–10 minutes, until foamy.
- In a large bowl, combine flour, sugar, and salt. Add yeast mixture, egg, and melted butter. Mix until a soft dough forms.
- Knead on lightly floured surface ~8 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot ~1 hour or until doubled.
- For the filling, mix cheese, sugar, vanilla, and egg yolk until creamy.
- Preheat oven to 350 °F (175 °C). Line a baking sheet with parchment.
- Punch down dough, divide into 12 equal pieces (~80 g). Shape into balls and place spaced on sheet.
- Gently press thumb into center of each to create a well. Spoon 1 tablespoon of cheese filling into each indentation.
- Brush edges with egg wash. Bake 18–22 minutes until buns are golden and filling sets.
- Cool slightly on the pan, then transfer to wire rack. Serve warm or at room temperature.
