  • 1 egg
  • 2 tablespoons vegetable oil

For the filling:

  • 2 medium potatoes, peeled and diced
  • 2 teaspoons harissa paste
  • 1/2 teaspoon ground caraway
  • Salt to taste
  • 1/2 cup canned tuna, drained
  • 2 hard-boiled eggs, quartered
  • 1/3 cup pitted black olives
  • 2 tablespoons harissa paste (for spreading)

Optional salad (for freshness):

  • 1/2 tomato, diced
  • 1/2 cucumber, diced
  • 2 tablespoons red onion, chopped
  • 1 tablespoon parsley, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil

Instructions

  1. Make the dough: Combine flour, yeast, sugar, and salt in a bowl. Add warm water, egg, and oil. Knead until a soft, smooth dough forms. Cover and let rise for 1 hour.
  2. Divide the dough into 8 pieces. Roll into ovals about 1/2 inch thick. Let rise 15 more minutes.
  3. Heat oil in a deep pan. Fry dough pieces until golden on both sides. Drain on paper towels and let cool slightly.
  4. Prepare potato salad: Boil diced potatoes until tender. Drain and toss with harissa, caraway, and salt.
  5. Optional salad: Mix tomato, cucumber, onion, parsley, lemon juice, and olive oil in a bowl. Set aside.
  6. Assemble the sandwich: Slice each fried bread lengthwise, leaving one side intact. Spread a layer of harissa inside. Add a scoop of spicy potatoes, a spoonful of tuna, black olives, and a wedge or two of hard-boiled egg. Optionally, add a spoonful of the fresh salad.
  7. Serve warm or room temperature—no sides required.
