  • 1/2 cup diced tomatoes
  • 1/4 cup chopped parsley
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven: to 375°F (190°C).
  2. Prepare bell peppers: Cut tops off bell peppers, remove seeds, and place in a baking dish.
  3. Cook quinoa: Rinse quinoa and cook with water or broth according to package directions.
