Creamy and dreamy, these strawberry cheesecake bars feature a buttery graham cracker crust, a rich vanilla cheesecake layer, topped with sweet strawberry sauce and a white chocolate drizzle. A portable dessert with all the flavor of classic cheesecake in bar form!

For the Crust:

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Cheesecake Layer:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • ¼ cup sour cream

For the Strawberry Topping:

  • 1 cup fresh or frozen strawberries
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch + 1 tbsp water (slurry)

For the Drizzle:

  • ¼ cup white chocolate chips or vanilla candy melts, melted

Instructions

  1. Preheat oven to 325°F (163°C). Line an 8×8” pan with parchment paper.
  2. Combine graham crumbs, sugar, and melted butter. Press evenly into the pan. Bake for 10 minutes. Let cool.
  3. Beat cream cheese until smooth. Add sugar, eggs, vanilla, flour, and sour cream. Mix until creamy.
  4. Pour cheesecake batter over cooled crust. Bake for 30–35 minutes until just set. Cool completely.
  5. In a saucepan, cook strawberries, sugar, and lemon juice over medium heat until juicy. Add cornstarch slurry, stir until thickened. Cool and spread over cheesecake.
  6. Chill bars for 3–4 hours or overnight.
  7. Drizzle with melted white chocolate. Slice into bars and serve chilled.
