For the Roasted Butternut Squash:

  • 1 medium butternut squash, peeled and sliced into thin wedges
  • 2 tbsp olive oil
  • 1 tsp smoked paprika (optional)
  • Salt and freshly cracked black pepper, to taste

For the Feta Dip:

  • 1 cup (150g) crumbled feta cheese
  • ½ cup (120g) plain Greek yogurt or sour cream
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced (optional for a punchy dip)

To Finish:

  • Fresh parsley or mint, chopped
  • Drizzle of olive oil
  • Extra black pepper

Instructions

  1. Roast the Squash: Preheat oven to 400°F (200°C). Toss squash slices with olive oil, paprika, salt, and pepper. Arrange on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and tender.
  2. Make the Feta Dip: In a food processor, blend feta, yogurt, lemon juice, olive oil, and garlic until creamy and smooth. Taste and adjust with salt or lemon as needed.
  3. Assemble the Dish: Spread the whipped feta onto a serving plate or shallow bowl. Layer the roasted squash on top. Sprinkle with herbs, a touch more olive oil, and cracked pepper.
