Sausage Coil:

  • 1 large pork or chicken sausage coil (about 1 lb / 450 g)

Onion Bed:

  • 1 large onion, thickly sliced
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste

Optional Garnish:

  • fresh parsley or rosemary sprig

Instructions

  1. Preheat Oven: Preheat oven to 375 °F (190 °C).
  2. Prepare Onion Bed: Arrange sliced onion in a shallow roasting pan or oven-safe skillet. Drizzle with 1 tbsp olive oil, season with a pinch of salt and pepper.
  3. Coil Sausage: Coil the sausage on top of the onions.
  4. Season and Brush: In a small bowl, mix remaining olive oil with rosemary, thyme, garlic powder, smoked paprika, salt, and pepper. Brush the sausage coil evenly with this seasoned oil.
  5. Roast: Roast in the preheated oven for 30–35 minutes until sausage is golden-brown and cooked through, turning once halfway through for even crisping.
  6. Rest and Serve: Remove from oven, let rest for a few minutes, garnish with fresh parsley or rosemary if desired. Serve hot, slicing the coil into thick rounds and spooning roasted onions alongside.
