For the Cookies:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tbsp Meyer lemon juice
- 1 tbsp lemon zest
- 1/2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 tsp salt
For Coating:
- Additional powdered sugar
- Cream butter and powdered sugar: In a mixing bowl, cream the softened butter with powdered sugar until light and fluffy.
- Add lemon juice, zest, and vanilla: Mix in the Meyer lemon juice, lemon zest, and vanilla extract until well combined.
- Mix in flour and salt: Gradually add the all-purpose flour and salt, mixing until a dough forms.
- Roll into a log, chill 1 hour: Shape the dough into a log, wrap in plastic wrap, and chill in the refrigerator for about 1 hour.
- Slice and bake: Preheat the oven to 350°F (175°C). Slice the chilled dough into rounds and bake for 10–12 minutes until the edges are lightly golden.
- Cool and coat with powdered sugar: Allow the cookies to cool, then coat them generously with powdered sugar.
