Crust:

  • 1½ cups flour
  • ½ cup butter, cold
  • ¼ cup ice water

Lemon Filling:

  • 1 cup sugar
  • 2 tbsp cornstarch
  • 1 tbsp flour
  • ¼ tsp salt
  • 1½ cups water
  • 3 egg yolks, beaten
  • 2 tbsp butter
  • ½ cup lemon juice
  • 1 tsp lemon zest

Meringue:

  • 3 egg whites
  • ¼ tsp cream of tartar
  • 6 tbsp sugar

Instructions

  1. Prepare and blind-bake pie crust: Combine flour and cold butter until crumbly. Gradually add ice water until dough forms. Chill, roll out, and blind-bake.
  2. Cook sugar, cornstarch, flour, salt, and water: Cook until thickened. Add yolks, butter, lemon juice, and zest. Pour into crust.
  3. Make meringue: Beat egg whites with cream of tartar until foamy. Gradually add sugar until stiff peaks form. Spread over pie.
  4. Bake: Bake at 350°F (175°C) until meringue is golden.
