Ingredients

For the Macarons:

  • 1 cup almond flour
  • ¾ cup powdered sugar
  • 2 large egg whites
  • ¼ cup granulated sugar
  • Gel coloring: lavender and mint

For the Filling:

  • ½ cup butter
  • 1 cup powdered sugar
  • 1 tbsp champagne or champagne extract

Instructions

  1. Sift Dry Ingredients: Sift almond flour and powdered sugar together.
  2. Whip Egg Whites: Whip egg whites until foamy, slowly adding granulated sugar until stiff peaks form.
  3. Fold in Dry Mix: Gently fold the dry mixture into the whipped egg whites. Divide the mixture and color one portion pastel lavender and the other mint.
  4. Pipe and Bake: Pipe rounds of the mixture onto parchment paper, let them rest for 30 minutes, then bake at 300°F (150°C) for 14–16 minutes.
  5. Fill: Prepare the filling by creaming butter, powdered sugar, and champagne. Fill the macarons with the champagne buttercream.
  6. Chill and Serve: Chill the macarons before serving.
