For the Macarons:
- 1 cup almond flour
- ¾ cup powdered sugar
- 2 large egg whites
- ¼ cup granulated sugar
- Gel coloring: lavender and mint
For the Filling:
- ½ cup butter
- 1 cup powdered sugar
- 1 tbsp champagne or champagne extract
- Sift Dry Ingredients: Sift almond flour and powdered sugar together.
- Whip Egg Whites: Whip egg whites until foamy, slowly adding granulated sugar until stiff peaks form.
- Fold in Dry Mix: Gently fold the dry mixture into the whipped egg whites. Divide the mixture and color one portion pastel lavender and the other mint.
- Pipe and Bake: Pipe rounds of the mixture onto parchment paper, let them rest for 30 minutes, then bake at 300°F (150°C) for 14–16 minutes.
- Fill: Prepare the filling by creaming butter, powdered sugar, and champagne. Fill the macarons with the champagne buttercream.
- Chill and Serve: Chill the macarons before serving.
