  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 2 (14-ounce) cans sweetened condensed milk
  • 1 cup fresh key lime juice
  • Zest of 2 limes
  • 4 large egg yolks

For the Topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Fresh lime slices for garnish

Instructions

  1. Preheat the oven: to 350°F (180°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Make the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. Bake the crust: for 10 minutes, then remove from the oven and let it cool slightly.
  4. Prepare the filling: In a large bowl, whisk together sweetened condensed milk, key lime juice, lime zest, and egg yolks until smooth.
  5. Pour the filling: over the crust and bake for 15 minutes, or until set.
  6. Cool and chill: Let the bars cool to room temperature, then refrigerate for at least 2 hours.
  7. Make the topping: In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  8. Serve: Cut the bars into squares, top each with a dollop of whipped cream, and garnish with fresh lime slices.

  • For extra tang, add more lime zest to the filling.
  • These bars can be made a day ahead and stored in the refrigerator.
