Bell Peppers:

  • 6 large bell peppers (red, yellow, or green)

Ground Beef Mixture:

  • 1 lb lean ground beef (or ground turkey)
  • 1/2 cup cooked white rice
  • 1/2 cup canned corn, drained
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup diced onion
  • 1 tsp olive oil
  • 1 tbsp taco seasoning
  • 1/2 cup salsa
  • 3/4 cup shredded cheddar or Mexican blend cheese
  • Salt and pepper to taste

Garnish:

  • Fresh cilantro or parsley for garnish

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C). Lightly grease a large baking dish.
  2. Prepare Bell Peppers: Slice the tops off bell peppers and remove seeds and membranes. Set aside.
  3. Cook Ground Beef Mixture: In a skillet over medium heat, heat olive oil and sauté onions. Add ground beef, cook until browned, then drain excess fat. Stir in taco seasoning, salsa, corn, beans, and rice. Season with salt and pepper.
  4. Fill Peppers: Spoon the mixture into the hollowed bell peppers and place them in the baking dish. Top with cheese.
  5. Bake: Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and peppers are tender.
  6. Garnish and Serve: Garnish with cilantro or parsley before serving warm.
