Guinness Beef Pie Recipe

For the Beef Stew Filling:
- 2 tbsp olive oil
- 2 lbs (900g) stewing beef, cut into chunks
- Salt & black pepper to taste
- 1 large onion, chopped
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 2 tbsp all-purpose flour
- 1 ½ cups (355ml) Guinness stout
- 1 cup (240ml) beef broth
- 2 tsp Worcestershire sauce
- 1 tsp fresh thyme leaves
- 1 bay leaf
- 1 cup chopped carrots
- 1 cup chopped mushrooms
For the Pie Crust:
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Brown the Beef: In a large pot, heat olive oil over medium-high. Season beef chunks with salt and pepper. Brown in batches, then set aside.
- Sauté the Aromatics: In the same pot, reduce heat and sauté onions until softened. Add garlic and tomato paste. Cook 1 minute.
- Deglaze & Simmer: Sprinkle in flour, stir well, then pour in Guinness, beef broth, Worcestershire, thyme, and bay leaf. Add browned beef back in.
- Add Veggies & Stew: Stir in carrots and mushrooms. Bring to a boil, then reduce heat to low. Cover and simmer for 1½–2 hours, or until beef is fork-tender and sauce thickened.
- Assemble the Pie: Preheat oven to 400°F (200°C). Pour beef filling into a pie dish. Top with puff pastry, trimming excess. Crimp edges, cut slits on top, and brush with egg wash.
- Bake: Bake for 25–30 minutes or until pastry is golden and puffed. Let rest 5–10 minutes before serving.
