Marinade:

  • 1 1/2 lbs boneless chicken thighs, cut into chunks
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 stalk lemongrass, finely chopped (or 1 tsp lemongrass paste)
  • 1/2 teaspoon chili flakes (optional)

Additional:

  • Bamboo skewers, soaked in water

Instructions
