  • 1/2 cup (115g) cold unsalted butter, cubed
  • 1/4 cup (30g) powdered sugar
  • 1 large egg yolk
  • 12 tablespoons cold water

For the Ganache Filling:

  • 8 oz (225g) dark chocolate (70%), finely chopped
  • 3/4 cup (180ml) heavy cream
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Make the Pastry: In a bowl, whisk together flour, cocoa powder, and powdered sugar. Rub in the cold butter until the mix resembles breadcrumbs. Add the egg yolk and cold water, mix until dough forms. Shape into a disc, wrap in plastic, and chill for 30 minutes. Roll out dough and line a 9-inch tart tin. Prick the base with a fork. Chill again 15 minutes. Preheat oven to 350°F (175°C). Blind bake with parchment and weights for 15 minutes, then remove weights and bake 5–10 more minutes. Cool completely.
  2. Make the Filling: In a saucepan, heat heavy cream until just simmering. Pour over chopped chocolate, let sit 1 minute, then stir until smooth. Stir in butter, vanilla, and a pinch of sea salt. Pour ganache into cooled tart shell. Smooth the top. Chill for at least 2 hours until set. Slice and serve at room temperature.
