For the Meatballs:

  • 1 lb ground lamb (or beef or turkey)
  • 2 cloves garlic, minced
  • 1/2 small red onion, finely chopped
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese
  • 1 tbsp olive oil

For the Bowl:

  • 2 cups cooked basmati or jasmine rice
  • 1 cup tzatziki sauce
  • 1 cup hummus
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 tbsp lemon juice
  • 2 tbsp crumbled feta cheese
  • Warm pita bread for serving
  • Fresh dill for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground lamb, garlic, red onion, oregano, cumin, salt, pepper, feta, and olive oil. Mix until combined but don’t overwork.
  3. Roll into 1-inch meatballs and place on the baking sheet.
  4. Bake for 20–22 minutes or until browned and cooked through.
  5. While meatballs bake, prepare cucumber salsa by combining cucumber, cherry tomatoes, red onion, lemon juice, and feta in a bowl.
  6. To assemble the bowl, start with a bed of rice, then add tzatziki, hummus, cucumber salsa, and meatballs.
  7. Garnish with fresh dill and serve with warm pita.
