These Lemon Squares are the perfect balance of sweet and tangy, with a buttery shortbread crust and a luscious lemon filling. They are easy to make and even easier to devour!

Ingredients

Scale

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar

For the Filling:

  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven: to 350°F (180°C). Grease and line an 8-inch square baking pan with parchment paper.
  2. Make the Crust: In a medium bowl, mix the flour, butter, and powdered sugar until crumbly. Press the mixture into the prepared pan and bake for 15-20 minutes, or until lightly golden.
  3. Prepare the Filling: In another bowl, beat the eggs and granulated sugar until well combined. Add the flour, lemon juice, and zest, and mix until smooth.
  4. Assemble: Pour the filling over the baked crust and return to the oven. Bake for an additional 20-25 minutes, or until the filling is set.
  5. Cool and Serve: Allow the lemon squares to cool completely in the pan before slicing into squares. Dust with powdered sugar before serving.

Notes

  • For an extra citrusy kick, try adding a bit more lemon zest to the filling.
  • These lemon squares are best enjoyed chilled, so refrigerate before serving if desired.
