For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
For the Filling:
- 2 large eggs
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- Preheat the oven: to 350°F (180°C). Grease and line an 8-inch square baking pan with parchment paper.
- Make the Crust: In a medium bowl, mix the flour, butter, and powdered sugar until crumbly. Press the mixture into the prepared pan and bake for 15-20 minutes, or until lightly golden.
