  • 1 tsp dried oregano
  • Salt and pepper, to taste

Additional Ingredients:

  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) diced tomatoes
  • 1 cup vegetable broth or water
  • Juice of 1 orange + orange segments for garnish
  • Optional: pinch of cinnamon or cocoa powder for richness

Instructions

  1. Heat oil in a pot. Sauté onion until soft.
  2. Add garlic, tomato paste, and all spices. Cook for 1 minute.
  3. Stir in beans, tomatoes, broth, and orange juice. Simmer for 20–25 minutes.
