For the Florentine Cookies:
- ½ cup unsalted butter
- 1 cup granulated sugar
- ½ cup light corn syrup or honey
- ½ cup chopped almonds (or mixed nuts)
- ¼ cup all-purpose flour
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
For the Chocolate Coating:
- 4 oz dark chocolate (60–70%), finely chopped
- 1 teaspoon coconut oil or butter (optional, for shine)
- Preheat oven to 350 °F (175 °C). Line a baking sheet with parchment paper or silicone mat.
- In a small saucepan, melt butter, sugar, and corn syrup over medium heat. Stir until sugar dissolves and mixture bubbles. Remove from heat and stir in cream, vanilla, salt, flour, and chopped nuts until evenly combined.
- Drop small tablespoons of batter (~1 tbsp) onto the prepared sheet, spaced ~3″ apart to allow spreading.
- Bake 8–10 minutes, or until edges are golden and lace pattern forms. Rotate pan halfway through for even baking.
- Let cookies cool on sheet for 2 minutes before transferring (still flexible) to a cooling rack. They’ll crisp as they cool.
- For chocolate: melt dark chocolate with coconut oil in a microwave or double‑boiler until smooth. Spread or dip half the bottom of each cooled cookie.
- Allow chocolate to set at room temperature or chill briefly.
