For the crepes:
- 3 eggs
- 1 cup milk
- ½ cup water
- 1 cup flour
- 2 tbsp melted butter
- Pinch of salt
For the filling:
- 1 cup ricotta or farmer’s cheese
- 4 oz cream cheese
- 1 egg yolk
- 3 tbsp sugar
- 1 tsp vanilla
For the cherry sauce:
- 1½ cups pitted cherries (fresh or frozen)
- ¼ cup sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- ¼ cup water
- Prepare the crepes: Blend all crepe ingredients until smooth. Cook crepes on a nonstick skillet, then set aside.
