For the crepes:

  • 3 eggs
  • 1 cup milk
  • ½ cup water
  • 1 cup flour
  • 2 tbsp melted butter
  • Pinch of salt

For the filling:

  • 1 cup ricotta or farmer’s cheese
  • 4 oz cream cheese
  • 1 egg yolk
  • 3 tbsp sugar
  • 1 tsp vanilla

For the cherry sauce:

  • 1½ cups pitted cherries (fresh or frozen)
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • ¼ cup water

Instructions

  1. Prepare the crepes: Blend all crepe ingredients until smooth. Cook crepes on a nonstick skillet, then set aside.
  2. Make the filling: Mix the filling ingredients. Place 2 tbsp of the filling on each crepe and fold burrito-style.
  3. Cook the blintzes: Pan-fry the filled blintzes in butter until golden and crispy.
  4. Prepare the cherry sauce: Simmer the cherry sauce ingredients in a pot until thickened, about 5–7 minutes.
  5. Serve: Serve the blintzes topped with the warm cherry sauce and a dollop of whipped cream.
