For the Cajun Shrimp:
- 1 lb (450g) large shrimp, peeled and deveined
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional for extra heat)
For the Alfredo Sauce:
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp cream cheese
- 2 tbsp unsalted butter
- Salt and pepper to taste
- 1/4 cup fresh chopped parsley
For the Pasta:
- 8 oz spaghetti or linguine
- Salt for pasta water
For the Side:
- 1 cup cherry tomatoes, halved
- 1/2 cup bell peppers, thinly sliced
- 1 tbsp olive oil
- Fresh basil, chopped
For the Toast:
- 4 slices of white or sourdough bread
- 2 tbsp butter, softened
- 1/2 tsp garlic powder
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Drain and set aside.
- Sear the Shrimp: Sauté shrimp with Cajun seasoning in olive oil and butter until pink and cooked through. Set aside.
- Prepare the Alfredo Sauce: In the same pan, make the Alfredo sauce by melting butter, adding garlic, heavy cream, cream cheese, and Parmesan. Season and simmer with shrimp and parsley.
- Prepare the Side: Sauté cherry tomatoes and bell peppers, then garnish with basil.
- Make the Toast: Spread butter and garlic powder on bread slices, then toast until golden.
- Finish and Plate: Toss pasta in the sauce or serve shrimp Alfredo over pasta. Plate with toast and tomato salad. Garnish to taste.
