  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons flour
  • 1 cup beef broth

For the mashed potato topping:

  • 2 cups mashed potatoes (prepared from 4 medium potatoes)
  • 2 tablespoons butter
  • 1/4 cup milk
  • Salt and pepper to taste
  • Optional: 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). In a large skillet, heat olive oil. Add onions and cook until softened.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in garlic, tomato paste, Worcestershire sauce, thyme, salt, pepper, and flour. Mix well.
  4. Add beef broth and frozen vegetables. Simmer for 5–7 minutes until thickened.
  5. Transfer meat mixture to a baking dish. Spread mashed potatoes evenly on top. Sprinkle cheese if using.
  6. Bake for 25–30 minutes until golden and bubbling.
  7. Cool completely before freezing, or serve warm with green beans or a side salad.
