Bread:

  • 2 slices brioche or sourdough bread

Cheese and Filling:

  • 3 oz brie cheese, sliced
  • 1/2 cup fresh blackberries
  • 1 tsp butter
  • 1 tsp honey (optional)
  • Pinch of sea salt

Candied Lemons:

  • 1 lemon, thinly sliced
  • 1/2 cup sugar
  • 1/2 cup water

Instructions

  1. Candied Lemons: In a small saucepan, combine sugar and water. Bring to a simmer, then add lemon slices. Simmer gently for 15 minutes until translucent. Remove and let cool on parchment paper.
  2. Assemble the Sandwich: Butter one side of each bread slice. On the unbuttered side, layer brie, blackberries, and a drizzle of honey if using. Sprinkle a tiny pinch of salt.
  3. Cook the Sandwich: Close sandwich with the other slice of bread, buttered side facing out. Heat a skillet over medium heat. Cook sandwich 2–3 minutes per side until golden brown and cheese is melted.
  4. Serve: Top with candied lemon slices before serving.
